As far as the log platform goes, you should be able to program it so that only the legs are lengthened when stretching vertically, and the middle column is duplicated between the edges when stretching horizontally. As for the palm tree, you're right; it just doesn't work. It's a good idea, but the way it's tiled is incorrect.

Firstly:
Uh... I don't think any of the NES sprites have broke the three-color rule before because sprites are made up by small tiles that turn into a single sprite. For an example the SMB3 koopa troopa uses black, green/red, brownish orange-ish and bright peach. The green/red color is a separated sprite tile from the other parts.

Secondly:
Especially like the trick in the old DK, MB or DKJR sprites use the black background for eyes and etc...
so after all the black stuff on sprites in games like that is just the background. Even SMB2 mario, peach and luigi's eyes are apart from the rest of their bodies, how? Sprite tiles is the answer (like said in the beginning of this quote). But yes other than that the log seems to actually have four colors because all colors are pretty much everywhere even though nintendo does use four colors but that's because it's SMM not the NES.

As you can see... but all well, yep just editing to have three colors or have three colors apart in each sprite tile should do the job.
